Abstract:Antarctic krill as a huge and unexploited marine biological resource has been widely concerned. Antarctic krill surimi is a kind of surimi products made from Antarctic krill raw material and is a new type of marine conditioning food. It is also a new type of high-protein and low-fat marine food with rich nutrition and delicious taste, which occupies a special position in Antarctic krill industry. This paper summarizes the research progress of the basic components, nutritional value, processing technology, quality control and product development of Antarctic krill surimi and predicts its future development trend. In order to provide reference for the development, utilization and quality control of Antarctic krill surimi and promote the sustainable development of Antarctic krill industry.
