Abstract In order to establish a simple and effective method to extract,purify and detect type I collagen from skeletal muscle.Type I collagen in Sunit mutton skeletal muscle was extracted three steps crushing,acidolysing and salting out.Results showed that the obtained collagen was proved to have high electrophoretic purity.therefore,The method provides a valuable means for studying collagen and tenderness of muscle.
