About Meat Research

About the Journal

Meat Research was founded in 1987, sponsored by the China Meat Products Comprehensive Research Center. The journal is an official publication published monthly in Chinese with an ISSN number of 1001-8123 and a CN number of 11-2682/TS. Meat Research as an authoritative peer-reviewed publication in China focuses on both theoretical and technological advances. The journal has been consecutively recognized as Chinese Core Scientific Journal by Institute of Scientific and Technical Information of China (ISTIC) in 2023, and it has been listed in the Peking University’s Guide to Chinese Core Journals (7th, 8th, and 10th editions). It has also been fully included in databases such as Chinese Core Journal Database, Chinese Journal Full-text Database, Chinese Scientific Journal Database, China Journal Net, CAB Abstracts and FSTA.


Aims and Scope

Meat Research accept two types of articles: original research articles and review articles on frontiers. Research articles must be novel and complete. Review articles should focus on research hot spots and the latest advances to provide strong forward-looking guidance. High-quality articles with in-depth defined topics, reliable results, insightful interpretations and conclusions are especially welcomed.

Meat Research publishes the latest research findings in the field of meat, meat products, and related research. The research scope includes the quality and processing characteristics of meat, the relationships of nutritional components and bioactive substances with human health, product flavor and sensory characteristics, the control of harmful substances during processing or cooking, product preservation, storage and packaging; microorganisms and fermentation, illegal drug residues and food safety detection; authenticity identification; cell-cultured meat, regulations and standards. The columns of Meat Research can be divided as follows: fundamental research, processing technologies, quality and safety, packaging, transportation and storage, analysis and testing, and review.


The range of topics covered in the journal do not include:
    Content beyond meat, meat products, and related research.
    Antibacterial, anti-oxidation and animal experiments performed without using extracts with specific functional components.
    Reviews adapted from proposals, reviews of listed techniques and English reviews that do not represent characteristics of Chinese meat products.
    Functional or toxicological experiments on specific commercial products.
    Content of education reform.
    Related patent pending, reluctant to open compositions of experimental materials.
    Active components with only description of extraction techniques.
