Identification of Beijing-You Chicken Based on Electronic Nose Technology Combined with Chemometrics

Abstract:In this study, electronic nose (E-nose) technology combined with chemometrics was employed to identify BeijingYou chicken (BJY) from three other breeds. The odor of raw and cooked meat samples from the four breeds was analyzed by E-nose. The feature values of each sample were extracted for the following statistical analysis. Discriminant analyses were performed by stepwise linear discriminant analysis (S-LDA) and neural net pattern recognition. Two classifier models (multilayer perception (MLP) and support vector machine (SVM)) were established to discriminate BJY from the other breeds. A good classification of the four breeds especially BJY was achieved through S-LDA and neural net pattern recognition. Both the MLP and SVM exhibited good classification effect for cooked and raw meat samples. The overall recognition rates for the four breeds and the recognition rates for BJY from the other breeds were higher than 90%. The results indicated that E-nose technology combined with multivariate statistical analysis is feasible for the identification of BJY.
