Abstract Yeast extract is a new generation of high-level natural sauce with a set of nutrition, health and
seasonings. In this article,the definition, nutritional characteristics, the role in meat products and mechanism
of yeast extract were depicted in detail;at last, the research of yeast extract and its application were
discussed.
