Abstract The specific property of irradiation technology and the influence of its application on the
meat product microorganism and meat quality were elaborated. The quality control measures were
provided; the safety of meat products by irradiation was acknowledged and some examining methods in
common use were introduced. Finally, the article summarizes the primary direction of food irradiation
storage in meat products.
