Abstract Biotechnology is considered as one of four pillars in science and technology, it closed
related with the national economy and the people's livelihood, and it was regarded as the core of the
world knowledge economy in the 21st century. In the paper, biotechnology such as gene engineering,
enzyme engineering, fermentation engineering and cell engineering in the fields of muscle food
industry are reviewed.
