Abstract Stabilized chlorine dioxide is a kind of new, efficient, safe, quick and wide antiseptic. In 1996, GB—2760 takes stabilized chlorine dioxide into food additive as antimicrobial preservatives. The using scope is antiseptic on fruits and vegetables, and fish processing. But in animal-derived food, the application is so little. This paper introduces the properties, functional mechanism, safety, effect and application of chlorine dioxide on animal-derived food.
