Abstract:This paper introduced the application history of modified-atmosphere packaging and described
the fresh keeping mechanism, gas composition and influencing factors of MAP for chilled fresh meat. It
also discussed the interaction between MAP and other fresh keeping technology, the toxicity of CO and the
market prospect of MAP for chilled fresh meat.
