Abstract:Supercritical carbon dioxide which is considered to be a effective bactericide can be used in meat and meat products,this paper mainly introduced the Bactericidal effect of supercritical carbon dioxide and the effect of supercritical carbon dioxide on meat quality.In addition,this paper looked into the future prospects for the development of supercritical carbon dioxide in the meat industry.
