Meat Research (ISSN 1001-8123) is a monthly academic journal sponsored by the China
Meat Products Comprehensive Research Center. Meat Research publishes high-quality and original research papers or
reviews that advance the science of meat in China and abroad.
The scope of the journal:
Fundamental research, Processing technologies,
Quality and safety, Packaging, transportation and storage, Analysis and testing,
and Review.
The content relates to subjects of food chemistry,
food microbiology, food biochemistry, food nutrition, food quality and food safety,
food engineering, food biotechnology, food immunology, food enzymology, food processing
and packaging, postharvest physiology, food storage and preservation, etc.
Chinese herb for non food material, tobacco,
food processing machinery design, cooking skills are outside the scope of the journal.
Article review and acceptance
The acceptance criteria for all articles are
the quality and originality of the research and its significance to readership.
All manuscripts within the aim and scope of the journal are peer-reviewed by at
least two experts in the same or similar research field in a double-blinded manner.
Decisions on acceptance, revision, or rejection are usually made within three months
of submission. Papers are usually published in chronological order of acceptance.
The editors reserve the right to modify typescripts to eliminate ambiguity and repetition.
If extensive alterations are required, the manuscript will be returned to the author
for revision. The editor has the right to reject at any time any content that does
not adhere to the journal’s standard of academic integrity and publication ethics.

By signing of this document, the copyright of the paper is transferred legally to Meat Research, and the Editorial Board therefore has the authority to distribute

Journal Standing
Meat Research as an authoritative
peer-reviewed publication in China focuses on both theoretical and technological
advances. The 2023 Annual Report for Chinese Academic Journal Impact Factors shows
that the Impact Index (CI) of Meat Research ranks 9th among 54
food science and technology journals, an improvement compared to last year (13/52).
The citation indicators are as follows: Composite impact factor 2.273; comprehensive
impact factor 1.187; Q1. Chinese Science &Technology Journal Citation Reports
(core version) 2023 released by Institute of Scientific and Technical Information
of China (ISTIC) has shown various indicators of Meat Research as follows: comprehensive
evaluation score 46.1 (7/28), core impact factor 1.445 (8/28), core total cites
1321 (16/28). The journal has been listed in the Peking University’s Guide to Chinese
Core Journals (7th, 8th, and 10th editions). It
has also been fully included in databases such as Chinese Core Journal Database,
Chinese Journal Full-text Database, Chinese Scientific Journal Database, China Journal
Net, CAB Abstracts and FSTA.
