Abstract This paper reviews recent progress in the application of various immunoassays in animal-derived food. Special emphasis is on the application of enzyme-linked immunosorbent assay (ELISA), colloidal gold immunochrmatography, electrochemical immunoassay, radioimmunoassay, fluorescence immunoassay and immunomagnetic separation in the detection of antibiotics, pathogenic bacteria, hormones, toxins, heavy metals, central nervous system tissues and adulterants in meat products. This review is expected to provide valuable information for research in the field.
