Abstract Some modern techniques for detection of meat are reported in this paper.Physical techniques include machine sight techniques,supersonic wave techniques,electricalm agnetict echniques;instru- mental analytic techniques include high-perfor- mancel iquidc hromatography,capillarye lectrophoresis, neari nfrared,nuclearm agneticr esonances pectrum; modernm olecularb iologicalt echniquesi ncluden ucleic acid probe,biochip.Meanwhile this paper reported some techniques for fast detection of microbe. The objective is promoting quality of meat,and makes it more safe and hygienic.
