Abstract This paper introduced processing technology and quality indicator of the soft-packing Sichuan- flavored red-roast beef in detail.This paper pro- vided a theoretical basis for the industrialized process of this traditional product.It can be a technical reference for the industrialized process of the similar Chinese cooked meats,too.
