Abstract Hemoprotein is one of the blood process by-products and has been widely used in food and medicine. The problem to be solved is to prevent ferrous ions from being oxidized.The paper put forward assumed plans for ferrous ions protection,and in addition,summarized its phy siolog ical function and present utilization.
