Abstract The impact of meat products contaminated meat is an important factor,directly related to human health.This article,summarized several common detection technology in meat food.Including:polymerase chain reaction PCR,ELISA response,high-performance liquid chromatography,near-infrared detection,as China seeks to carry out the rapid identifi cation of meat food,to detect and poisoning the screening,treatment,prevention and emergency medical treatment of patients to provide reliable information to ensure the safety of the lives of people.
