Abstract Vacuum cooling is a rapid effective cooling method.In this paper,it was reviewed the recent developments of the technology of vacuum pre-cooling in equipment,model,pre-cooling techniques, and summarized its applied in meat.The purpose of this paper is the technology of vacuum pre-cooling is studied and popularized more widely.
