Abstract Modified atmosphere packing is one of the most important application of advanced technology of keeping meat products fresh. This paper summarized the mechanism of modified atmosphere packaging and factors which may affect the effort. At the same time, the gas composition and the main factors are introduced, elaborated on the researches of modified atmosphere packaging situation at abroad. It would provide valuable references for meat preservation and the promotion of meat industry.
