Abstract Color is an important factor that affects product quality. In order to improve product color, improve product quality, colorant and color auxiliary are widely used in processed meat products. This article summarized the colorant and color auxiliary used in meat products and the applications in meat of colorant and color auxiliary, and the current situation of the colorant and color auxiliary applied in processed meat products was discussed.
