摘要在不添加外源酶条件下以草鱼内脏为原料制取动物水解蛋白.以水解度(degree of hydrolysis,DH)为指标,通过正交试验优化加工工艺,分析NaCl添加量、料水比、温度、时间及pH值对DH值的影响.结果表明,在不添加外源酶条件下制取草鱼内脏水解蛋白的最佳条件为不添加NaCl、料水比1:1.5、时间4h、温度45℃、pH9.0.在以上条件下制备的水解液DH值达到77.43%.
Abstract:Grass carp visceral waste was used as the raw material to prepare hydrolyzed animal proteins by autolysis in an
aqueous NaCl medium without the presence of exogenous enzymes. In order to achieve maximum degree of hydrolysis (DH) of
grass carp visceral waste, operating conditions such as NaCl amount, material/water ratio, temperature, holding time and pH
were optimized using orthogonal array design method. The optimal conditions for maximizing the DH of grass carp visceral
waste were material/water ratio 1:1.5, temperature 45 ℃, holding time 4 h, pH 9.0, and as a result, a DH of 77.43% was obtained.
