Abstract：The development of nitrite’s determination by the means of various electrochemical sensors in foods was reviewed in this paper,especially meat, vegetable and diary products.The principle,mea- surement parameter and applicated fields of various electrochemical sensors including voltaic electro- chemical sensor,potential electrochemical sensor and so on,were introduced.Moreover,the advantages and disadvantages of different electrochemical sensors were compared.At last,the future trends of its development was also discussed.
