Abstract Abstract: Cathepsin is an important class of protease in animal tissue cells in the lysosome. That mainly in skeletal muscle is B, D, E, H, L-type cathepsins, and they play an important role for their eating quality of meat after slaughter; skeletal muscle protease nature vary in time and space, and many factors can affect their activities.
