Abstract In recent years, ultra high pressure processing is a research focus in food engineering field. the paper summarize the conception and characteristic of ultra high pressure processing, then emphasis on the application of ultra high pressure processing in meat products. It also prospect the application of ultra high pressure processing in meat products in future.
