Abstract Alcalase, Neutral-protease and Papain were used to hydrolyze deer blood. According to the degree of hydrolysis (DH) ,the DPPH·scavenging activity and reducing power of each enzyme, Alcalase was chosed as the experiment enzyme. We also obtained the optimum conditions of hydrolysate, substrate concentration for 5%, and [E/S] for 2%, and hydrolyzed for 5h.
