Abstract The safety of cooked meat products is related to the hazard of food in tache of consumption. As the hazard exists in any tache of food chain, any one of the chain should try his best to control the safety of the food. The safety of the cooked meat products is always one of the most important problems. ISO22000: 2005 "Food safety management systems-Requirements for any organization in the food chain" offers a standard for the cooked meat products safety management.
