Abstract Meat color is a major factor that influences the purchase decision of consumers.In order to maintain the stability of meat color,this review focused on the mechanism of meat coloration,factors affecting meat color,methods for protecting meat color,methodology used to evaluate meat color and developing trend.It provides the basics for the future development of meat industry.
