Abstract To ensure food safety and meet the consumers' increasing demands for the quality of food products, it is of vital importance to develop effective quality inspection systems during processing operation for the food industry. Hyperspectral imaging, as a non-destructive detection technique, allows rapid, efficient and accurate inspection of food quality and safety information. As an extension of our previous review, this paper specifies recent applications of hyperspectral imaging in quality inspection of vegetables, fruits, dairy products, grains and mushrooms and discusses its future trends and current limitations.
