Abstract GMP is the good production management system that can ensure the food safety with the high degree,and it is the requirement to achieve the rationalization,the scientific,the modernization of food production processe.The artcle introduced briefly the basic concepts,the development history,the purpose, the basic principle,the authentification procedure,the authentification lardmark and numbering of GMP;on this basis the GMP application in meat production was reviewed.
