Abstract Fermentative meat products are greatly popular because of their without cold storage, and good stability, high nutritional value, peculiar flavor and so on. The type and fermentation process of starter culture determine their ultimate quality, so the starter culture plays a crucial role in the produc-tion of fermentative meat products.
