Abstract Carnosine (β-alanine -L -histidine)is a water -soluble dipeptide,naturally presented in skeletal muscle,with multifunctional antioxidative activities.The antioxidative function of carnosine and its potential as a natural antioxidant in meat and meat products is indicated.
