Abstract：The problems of weight loss of foods stored in refrigerated condition were researched in this paper.It discussed the mechanism of the weight loss of foods and analyzed the effect factors of weight loss.Some practical measures for reducing the weight loss of foods in refrigerated condition were put forward finally.It will provide guidance to the problem of weight loss of foods in refrigerated condition.
