Abstract：A large amount of by-products,cholesterol-β-cyclodextrin compound,are produced during the process of eliminating the cholesterol from food by adopting microcapsule technique.The principle and method for releasing recovering and re-utilization cholesterol-β-cyclodextrin compound are both briefly introduced.
